I can assure you these little cakes taste gorgeous, which is more likely due to the recipe than any spectacular skill on my part. They use condensed caramel which was a new one for me. I guess it follows the same kind of idea as black treacle or golden syrup- something stupidly sweet and sticky in a tin that's impossible to measure out. Anything like that is going to be so bad for you it just needs to taste great, we all know that's the way it works. Here's how to do it: enjoy!
Cake Ingredients
80g/3oz butter
280g/10oz caster sugar
240g/8.5oz plain flour
1tbsp baking powder
pinch of salt
240ml/8.5fl oz full-fat milk
1/2 tsp vanilla extract
2 large eggs
150g/5.5oz Carnation condensed caramel
Cake:
- Use an electric whisk on the butter, sugar, flour, baking powder, salt and sugar, until it resembles bread crumbs. ( Make sure it's on a low speed or they'll be dust everywhere, but even so it's miles faster than doing it by hand.)
- Measure out the milk and add the vanilla extract to it. Then hand whisk the eggs and stir into the milk to combine.
- Add two-thirds to the flour/sugar mixture and beat until creamy.
- Mix in the tinned caramel and the remaining liquid then pour into muffin cases (not too full as it will overspill onto the baking tray, I had this problem, but then we do like our cakes big in our house)
Icing:
Icing Ingredients
175g icing sugar
60g unsalted butter
25ml full-fat milk
120g Carnation condensed caramel
walnut pieces or broken biscuits (basically something crunchy to cut through the sweet icing)
- Microwave/soften butter until it's almost melted then beat in with the icing sugar.
- Add the milk and beat once again.
- Repeat with the caramel, but be sure to add it in two batches.
- Swirl onto the cakes and top with the crunchy decoration of your choice.
I hope you have fun making these lovely little cakes, they are rich and sweet but also very moreish. Warning: this is definitely not a recipe for dieters. Apologies for the lack of pictures also, I'm not the best of photography, but I promise I will try. Where can you get condensed caramel from??
ReplyDeleteI think you can buy it just from the supermarket, ours was from Sainsbury's. It comes in the same tins as condensed milk, but it says caramel on it aswell (and dulce du leche in little letters too). Hope this helps. But if you still can't find it give me a shout and i'll post a recipe for how to make caramel if you like. The home done stuff can be a good topping for shortbread or go in middle of layer cakes too

ReplyDeleteRighto, I've posted a millionaire shortbread recipe which uses caramel. I've highlighted the start of the caramel section in yellow so it's easy find. The downside is you need condensed milk, which can also be hard to find. I'm not sure if that kind of caramel would work as well as it doesn't stay as runny. It might be worth trying to add some more normal milk before it's completely cool to try to make it a bit less stiff, but I'll leave it up to you x
